What day is it again?

Has it really been 21 days since I posted? Ugh!  Who knew Tristan moving home, me getting a job, and the kids starting soccer who cause so much ciaos?

My days kind of blur together. This past Friday I thought it was this upcoming Friday.  I’m sure I will adjust eventually! I used to be busier then this when we lived in Edmonton, just at the moment I’m having trouble remembering how I survived that.

So far training at work is going well. I’m loving the people I work with! They are all quirky and have fun personalities. It makes me want to go to work. It’s the getting up and being out of the house by 7:35am that I dislike. I’m looking forward to working nights.  No commute, and I don’t care what the weather is like at night lol!

Our Soccer schedule is pretty crazy it’s compacted into 3 days. Tuesday Shianne has practice at 6-7, Adrian had his game from 7-8:30. Of course practice and games are on opposite sides of the city. Shianne has her games on Wednesdays 6-7 and Adrian has his games Thursdays 7-8:30  Tuesdays and Wednesdays are the worst. I’m done work at 5. My drive from work to where the kids practice and play soccer is about 50-60minutes, without the stop at home to pick them up. It’s a very tight schedule. We make it barely on time, which drives me slightly crazy because I like being early for everything, But I think I’m dealing alright. (time will tell)

Tristan started his new job. He’s on a trip down to Texas, so far it’s going well from what I can tell anyways. It’s the same job he did before just a different company and less pay. But at least he will be home more often… hopefully it’s worth the trade off.

Hopefully it doesn’t take me another 21 days to post. I’ll try to get better!

One tired Momma

This Momma went and got herself a J.O.B!  It’s a pretty sweet deal. I have 3 months of training and once they feel I know everything I need to know then I’ll be working nights from home! 7 nights on 7 nights off. It’s a pretty sweet deal. So if you ever can’t sleep… chance are I will be awake!

But right now, I forgot how tiring it is to be a working mom! To get done work at 5 to drive 35-40 minutes to pick up the kids and get them to soccer for 6… I foresee the kids being a little late at times which will drive me crazy because I like being on time.

Other then feeling like I have no time to relax, but I actually really like this job. I might actually be a little sad to move to nights because everyone in the office is amazing to work with. They are super friendly… I get up actually wanting to go to work, which is a blessing in it’s self.

Tristan is on his way back to Alberta to finish off his final week at his Alberta job. Then he will be heading back home! No more flights back and forth!  The kids start soccer this week. And my goal is to find some sort of balance!

Well it’s Official…

It’s official, Tristan is getting a job in Ontario and moving home!

A LOT sooner then planned. But with cuts happening at his work, it just didn’t make sense for him to stay out there.  I’m sure we are in for a bit of hard times because we don’t have the debt paid down like we wanted, but I’m sure we will figure it out one day at a time.

Does this mean my days as a Part- Time wife are over? Hell to the No!  He’s still going to be a truck driver, if anything I’ll see him less now then before… just more often.

On to the next chapter!

Things Continue to look up!

It’s a stressful time around our house right now. We have so many things we are waiting to fall into place, it’s definitely exciting all the changes coming up!

I have my second interview today for a job I really, really, really, really want! so I have everything crossed and high hopes that I get it!

My diaper cakes are doing well. 2 sold this weekend. and I’ve worked out a consignment deal for the store that wants to sell a few in her store.  So I need to make 3 cakes for that to start(a boy, a girl and a gender neutral).  I’m also debating about signing up for some craft shows. The only thing holding me back is do I wait to see if I get this job I’m hoping for or do I just sign up and figure out a way around it if i get the job and my schedule falls on that weekend.

Tristan should be home this upcoming weekend. Yay! but it will be busy! He’s been applying to jobs in Ontario, So I believe we will be driving around to a few of those places on Friday to meet them in person. Oh to have him home again! One can dream! Either way it’s a pay cut him coming home but if I get this job and if the diaper cake thing starts to take off a bit more I’m sure we will be fine.

Things are crazy but everything is looking up!

Banana Cup Cakes

I used to only make banana bread, and I’m told my banana bread is A-mazing!  But I’ve made it so much the kids are getting sick of it! So I decided to look up a new recipe.  This one is Kid Tested and approved as even better than my banana bread.


Banana Cupcakes
1½ Cup all purpose flour
¾ Cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
3 mashed bananas
¼ Cup vegetable oil
1 teaspoon vanilla extract
1 egg, lightly beaten
Preheat oven to 350 degrees, line muffin tin with wrappers, set aside.

In a large bowl, add the flour, sugar, baking powder, baking soda and salt. Whisk to combine. Set aside.
In a medium sized bowl, add in the remaining ingredients. Stir to combine, add the wet mixture to the dry and stir until just combined and no dry spots.

Divide the batter among the 12 cupcakes wrappers, about ⅔ of the way full. Bake for 17-19 minutes, until a toothpick inserted comes out mostly clean.


I’ll have to make these when Tristan is home next and see if he can taste the baking soda, he is super picky about the amount of baking soda in recipes, I normally cut what ever the recipe asks for in half so that he can’t taste it.

Some days rock

Some days just rock! There’s no other way to describe them. You wake up thinking not much is going to happen and by the end of the day… you’ve managed to impress even yourself!

Today I had a job interview that I rocked. though I did ask for a higher then starting wage income. And they require 1 late night a week until 8pm which I don’t like since I’m a married single parent most of the time. I’m not sure if working that late is something I want to commit to. So we will see what happens there.

I decided to donate a diaper cake to a fundraising event for a group that helps encourage mom’s to breast feed. One of the ladies owns a baby boutique, I dropped of the diaper cake and the lady loved it so much, she wants me to figure out a whole sale price and make some for her to sell in her store! I’m over the moon excited. I know my family has been telling me how much they love my diaper cakes, but they are family they are supposed to pamper your ego a little bit right? But this lady loved them so much her exact words were “You could quit your job and sell these full time” too bad I don’t have a job. But it has inspired me to take the diaper cakes a bit more seriously, and maybe think outside the box for other ways to sell them. Maybe out of my garage on weekends, or some craft fairs. I want cheaper places to start so there’s not a lot out of pocket.

But the wheels are spinning and I’m doing what I do best… Brainstorming.. it’s the follow through that I lack a bit… but I’m calling this day my rockin’ day!

Pizza Dough

Who knew pizza dough was always so easy to make? When My husband was home last we wanted to have pizza but I was too lazy to drive and go pick it up (One of the hazards to living in the country) So when all else fails, head over to Pinterest (Honestly I probably need a Pinterest intervention, I use it more then google these days!) and look up a recipe!


Pizza Dough


2 and 1/4 teaspoons active dry yeast (one envelope)
2 teaspoons granulated sugar
1 and 1/4 cups warm water ( 105-115 degrees F)
3 and 2/3 cups white flour, unbleached, plus more shaping
1 teaspoon salt
2 tablespoons extra-virgin olive oil, plus 1 Tbs
1 teaspoon garlic powder (optional)


Combine the yeast, sugar, and warm water in a small bowl. Stir to dissolve the yeast and set aside for 5 minutes. The yeast mixture should look creamy and foamy on the top.

In the bowl of your stand mixer, combine 1 cup of the flour, salt, and olive oil. Stir the yeast once more to make sure it is all dissolved and add it to the flour mixture. Mix together with a hand whisk until lump free. Attach the dough hook to the mixer and add the remaining flour. Turn the mixer on low speed and mix for 15 -20 minutes, until the dough comes together and begins to pull away from the sides of the bowl. It takes time for the dough to come together. Don’t rush it and refrain from adding more flour. The dough should be slightly tacky once it’s finished kneading.

Lightly coat a bowl with olive oil. With lightly greased hands, scrape the dough out and shape it into a ball. Place the dough into the greased bowl and gently roll it around to coat all sides of the dough ball with oil. Cover with a lint-free towel and place the dough in a warm place to rise until doubled in size, about 45 minutes.
Gently punch the dough down and turn it out onto a lightly floured surface. Divide the dough into 2 equal halves. Shape each half into a ball, cover and let rest for 5 minutes. Roll the dough out into a 12-inch circle. You can also do this directly on your pizza pan. If you are using a pizza stone, do this step directly on your pizza peel. Spray your pizza pan with non-stick spray and dust lightly with flour or cornmeal. Once you’ve shaped the dough, gently transfer it to your prepared pizza pan.

Using the remaining Tbs of olive oil, brush the top of the pizza with the oil. For a more flavorful option, stir 1 tsp of garlic powder into the oil.
Top and bake according to your favorite recipe.

Honestly as soon as I get my new freezer I’m going on a baking spree and filling it with pre-made pizza dough! Talk about saving money! Why will I buy this stuff ever again?

Job Hunting Sucks

So I’ve decided it’s time to go back to work. My sister in law doesn’t need my help with the kids anymore, and nothing else seems to being going on that would keep me from getting a job. So it’s time to start earning money again.

So far I’ve sent out 40+ resumes and received a whole whooping 1 interview. I didn’t expect Ontario to be like Alberta where you can apply to one job and get that job. But still 40+ resumes and only 1 interview??

Not to mention the lady in the interview admitted to me she was over whelmed with all the interviews she had to do. She also told me she liked what she saw in me but if she interviewed someone similar to me that lived closer to work, they would get the job over me.  So… yeah I’m not holding my breath for my one interview. Thank god I’m not in a major hurry to find a job and I can hold out until a decent one comes along! But then I think of all those people who do need the jobs and this is what they are up against?

That sucks big time. It makes me realize how blessed we were in Alberta… sometimes I question why we left… and then I visit with family and I remember.

The quest for a job continues…

Easy Homemade Buns

These were extremely easy to bake! The name doesn’t lie! My kids and family ate them up so fast that on Easter weekend alone I made these 4 times!

Easy Homemade Rolls
I use a Kitchen Aid mixer with dough hook for this recipe.
¾ cup milk
4 tablespoons butter – cut into small pieces
¾ cup hot water
4 tablespoons sugar
1 teaspoons salt
4 – 5 cups flour
1 package active dry yeast (3/4 oz)


Preheat oven to 170 degrees
In small bowl or microwave safe measuring cup – heat milk and butter for 90 seconds on high
Pour into mixing bowl (I used a Kitchen Aid with bread hook)
Add ¾ cup hot water (should be slightly uncomfortable to the touch).
Add sugar and salt
Mix until well blended
Add 2 cups of flour and yeast – mix for about 1 minute.
Let sit for 5 minutes.
Add another 2 cups of flour, one at a time.
Add additional flour if needed until dough separates from the bowl.
Using Kitchen Aid or your hands, knead for 5 minutes until silky
Butter a 9 x 13 baking ban
Cut dough into desired shapes and add to prepared pan
Put into preheated 170 degree oven to rise. This takes about 30 minutes.
Once your buns are the desired size (sorry, can’t help it, gotta get one in!).
Turn up oven to 350 degrees without removing from oven.
Bake for about 20 minutes or until lightly brown.
Top with melted butter and coarse salt if desired.

Saving Money by Baking

I’m ALWAYS looking for new ways to save money!  Honestly I don’t know why I didn’t think of this before! BAKING!

I have a new found love for baking, I didn’t realize I enjoyed it so much! But there is something extremely gratifying after spending a few hours baking to have your family tell you through their mumbling stuffed mouths how much they love this new recipe you made. Unfortunately they wont always turn out so, it wont always save me money! I am how ever adding a “What’s Cookin!” section to the blog, just in case other people are wanting to try some new recipes and save themselves some money too!
